Halibut with a Portuguese Touch |

Ingredients
| 2 |
lbs. halibut (fresh or frozen) |
| 4 |
medium potatoes, cooked |
| 1/2 |
cup onions, finely chopped |
| 2 |
cloves garlic, minced |
| 2 |
tbsp. olive oil |
| 2 |
tomatoes, seeded and diced |
| 1/4 |
cup chopped green peppers |
| 2 |
tsp. lemon juice |
| 2 |
tbsp. chopped parsley |
| 1 |
tsp. salt |
| 1/4 |
tsp. freshly ground pepper |
Instructions
Thaw frozen halibut. Cut potatoes into 1/4-inch slices. Arrange in shallow buttered baking dish, sprinkling with salt and pepper. Place halibut steaks in single layer over potatoes. Sauté onion and garlic in olive oil. Add tomatoes, green peppers and sauté 2 minutes. Add remaining ingredients. Spoon over halibut steaks. Bake in oven at 375ºF for 15-20 minutes or until tender. Great served with gresh green beans, garnished with toasted sliced almonds and crusty rolls.
