Recipe of the Month
Every month, PRESD will feature a Portuguese recipe. Many of these recipes come people right here in our very own San Diego Portuguese community. Currently, PRESD only has a handful of recipes, if you would like to share your favorite Portuguese recipe(s), please email us.

 

February 2008 Recipe
Heavenly Ambrosia

Ingredients

2 can (No. 2 1/2) fruit cocktail
1 can (large) pineapple chunks
2 can (13 1/4 oz) pineapple tidbits
1 can (11 oz.) mandarin orange segments
1/2 cup shredded coconut
1/2 cup angel flake coconut
1 cup miniature marshmallows
1 pint sour cream
1 small container cool whip

Instructions

Drain canned fruit in colander, be sure to shake several times and let set until well-drained. In large mixing bowl pour fruit, marshmallows, coconut; add sour cream and mix all together. Chill several hours; mix in cool whip and chill again for a couple hours before serving.

Yield: 20 servings or more
