April 2008 Recipe
Sardinhas da Caldeirada

Ingredients

3/4 tsp. salt
2 lbs. fish
2 large onions, sliced
1/2 cup olive oil
1 can (19 oz.) tomatoes
1 can (8 oz.) tomato sauce
1 tsp. crushed sweet red peppers
1/2 bunch parsley
1/2 cup white wine
1-1/2 cup water

Instructions

Salt fish for a few hours. Brown onions in olive oil; add tomatoes, tomato sauce and remaining ingredients. Simmer for 30 minutes, add fish. Continue to simmer until fish is cooked. Serve in deep plates over French bread. Any kind of fish can be used.

Yield: 4 servings
