Feijão a Portuguesa
Throughout Portugal, beans are a traditional side dish to pork, chicken, fish and beef. There are many variations on Feijão a Portuguesa. For extra spice, add the hot chili pepper. |
Ingredients

lb. pinto beans |
| 1/4 |
lb. bacon, chopped |
| 1/4 |
lb. linguiça, chopped |
| 1 |
onion, minced |
| 2 |
garlic cloves, crushed |
| 1 |
can tomato sauce (8 oz.) |
| 2 |
tbsp. chili powder |
| 1 |
tbsp. worcester sauce |
| 1 |
tbsp. cumin |
| 1/4 |
tsp. cinnamon |
| 1 |
bay leaf |
| 1/2 |
tsp. salt |
| 1/4 |
tsp. pepper |
| 1 |
hot chili pepper |
Instructions

Wash beans and soak them overnight. Do not drain, simmer for about 3 hours. In a skillet, fry pork, sauté onion and garlic. Add mixture, tomato sauce, and spices to beans. Mix all and simmer for about 1hour. Add water if necessary |
