Sopas do Espirito Santo
(Holy Spirit Sopas)
Ingredients

pounds chuck meat |
| 2 |
pounds soup bones |
| 1 |
small onion, minced |
| 1 |
tablespoon of spices |
| 1 |
head of cabbage |
| 1 |
turnip |
| 1 |
sprig of mint |
| |
salt, to taste |
| 10 |
cups of water |
| 1 |
cinnamon stick |
| 1 |
cup of white wine |
| 1/2 |
cup of tomato sauce |
| 1 |
French bread in slices |
Instructions
- Boil water and add meat, the spices tied in a clean cloth, wine, onion, tomato sauce, turnip, mint and salt.
- Cover and cook until tender (about 3 hours).
- Cut cabbage in half and add to mixture. Continue cooking until cabbage is tender.
- Place bread slices and a sprig of mint in a deep serving dish or tureen.
- Pour broth and cabbage in tureen. Place meat in another dish and serve with the sopas.
