Recipe of the Month

Every month, PRESD will feature a Portuguese recipe. These recipes come people right here in our very own San Diego Portuguese community. Currently, PRESD only has a handful of recipes, if you would like to share your favorite Portuguese recipe(s), please email us.

July Recipe
Sopas do Espirito Santo
(Holy Spirit Sopas)

Ingredients
4 pounds chuck meat
2 pounds soup bones
1 small onion, minced
1 tablespoon of spices
1 head of cabbage
1 turnip
1 sprig of mint
  salt, to taste
10 cups of water
1 cinnamon stick
1 cup of white wine
1/2 cup of tomato sauce
1 French bread in slices

Instructions

  • Boil water and add meat, the spices tied in a clean cloth, wine, onion, tomato sauce, turnip, mint and salt.
  • Cover and cook until tender (about 3 hours).
  • Cut cabbage in half and add to mixture. Continue cooking until cabbage is tender.
  • Place bread slices and a sprig of mint in a deep serving dish or tureen.
  • Pour broth and cabbage in tureen. Place meat in another dish and serve with the sopas.
