Recipe of the Month

December 2007 Recipe
Christmas Fruit Cake

Christmas Fruit Cake

Ingredients

1/2 lb. margarine
2 cups brown sugar
6 eggs
4 cups all-purpose flour
2 tsp baking powder
2 tsp baking soda
1 tsp cinnamon
1/2 tsp mace
1/2 tsp cloves
1/2 tsp nutmeg
1/2 tsp ginger
1 can shredded pineapple (medium)
1 lb citron
2 cups coarsely chopped nuts
2 packages seedless raisins
2 packages currants
1 tsp salt
1/2 cup molasses (light or dark)
1/2 cup Brandy

Instructions

Soak all fruits overnight in Brandy. Prepare margarin, sugar by creaming together until well-blended. Add eggs and 3 cups of flour, reserve one cup to dredge fruit. Add spices, baking soda and baking powder. Mix all dry ingredients thoroughly. Then add fruit mixture until all fruit is well blended. Line loaf pans with butcher or heavy paper. Grease paper. Pour in fruit mixture. Bake at 250°F for 2.5 - 3 hours. Place a pan of water in the bottom of oven while baking. Remove from oven. Let cool in pans. Then, wrap in foil or plastic wrap to keep. Let age about one month prior to serving.

Yield: 5 Loaves
